This version comes from Diana Barrios-Treviño of Los Barrios and La Hacienda de los Barrios Restaurants in San Antonio, Texas. Diana says, “I’m glad to say that I keep the tradition going in my family, and hope it brings back memories of Sunday dinner at Abuelita’s.
2 tablespoons vegetable oil
1 5-ounce box vermicelli
1/2 onion, thinly sliced
2 garlic cloves, finely chopped
1 green bell pepper, seeded and thinly sliced
2 to 3 tomatoes, halved and pureed in a blender
1 15-ounce can chicken broth
Salt to taste
- Heat oil in deep saucepan over low heat. Break vermicelli and add to saucepan, stirring constantly until toasted and golden brown, about 5 to 6 minutes. Don’t let noodles burn.
- Add onion, garlic, and bell pepper and cook until soft, about 5 minutes. Drain excess oil from pan.
- Add tomatoes, broth and 1 cup water to vermicelli mixture and bring to a simmer. Simmer for 10 to 15 minutes.
- Season to taste with salt and serve hot.
